Kecap Manis Gluten-Free Vegan
This is a common Indonesian sauce. It is not typically gluten-free, or vegan or ever potentially soy free. If you have food allergies, it’s safer to make this at home. Kecap Manis is easy to make at home. The added bonus: quality control without all the weird stuff.
The sauce is commonly used in stir-fry, noodles, fried rice, marinades and more. It’s used in many other East Asian recipes like my Phở Áp Chảo. If you’re in a bind, substitute for oyster sauce if you’re wanting to create a vegan dish.
Where to find it
You can find Kecap Manis in any Asian store or online. The most common brand is ABC and it’s owned by Heinz, which also means it has a ton of preservatives. This sauce is a staple in Indonesian cooking.
Use a low sodium gluten free soy sauce. If you don’t have allergies to gluten, you could easily use a regular soy sauce in a pinch. Make sure to use low sodium. Once it’s reduced, it becomes salty.
Avoiding soy? Use coconut aminos and reduce the amount of sugar by half.
Have access to palm or coconut sugar? They add a little more depth than your standard sugar, but it’s not necessary if you don’t have it.
The sauce is simple, easy to make and takes all of about 10 minutes. The great part is it stores for a good amount of time because of it’s sugar content.
Quick, easy, savoury, and sweet. This sauce is similar in feel to molasses with an Asian twist. Incredibly simple and great for stir-fry, marinades, noodles, hurricane fries and more.
1/2 cup of organic sugar (or palm or coconut sugar)
1/2 cup of low sodium gluten free soy sauce
1–2 cloves garlic
1–2 Kaffir leaves
1 inch ginger
Over medium heat in a small sauce pan add sugar and soy sauce. Continuously stir for 6-8 minutes until thickened. The sauce should cover the back of the spoon and drizzle out slightly faster than molasses while hot.
Turn off heat and pour into a glass jar.
Allow to cool and thicken before placing the lid and store in the fridge. Use for stir-fry, noodles, fried rice, marinades and wherever recipe calls for it.
